How to Use the Restaurant Order Throughput Calculator

This restaurant order throughput calculator helps quick-service and fast-casual restaurant operators measure how many orders their operation can process during peak periods and estimate the revenue impact of improving service capacity.

Enter your current orders per hour, average ticket, peak service duration and a potential improved throughput rate. The calculator can show current revenue capacity, potential revenue capacity and the additional sales that could be generated if the restaurant can process more orders while customer demand is available.

Throughput is especially important for restaurants that regularly experience lines, drive-thru backups, kitchen bottlenecks or online order congestion during busy periods.

What Is Restaurant Order Throughput?

Order throughput measures how many customer orders a restaurant can successfully process during a specific period of time. In a quick-service operation, it can be measured by minute, 15-minute interval or hour.

Orders Per Hour = Completed Orders ÷ Operating Hours

Average throughput across an entire day can be useful, but peak-period throughput often provides more actionable information. A restaurant may have plenty of capacity during the afternoon while reaching its operational limit during lunch or dinner.

How Throughput Affects Restaurant Revenue

When customer demand exceeds the number of orders your operation can process, throughput becomes a revenue constraint. Customers may abandon the line, leave the drive-thru, cancel digital orders or choose another restaurant when wait times become too long.

Revenue capacity can be estimated using order volume and average ticket.

Revenue Per Hour = Orders Per Hour × Average Ticket

For example, an operation processing 80 orders per hour with a $15 average ticket has an hourly revenue capacity of approximately $1,200. Increasing throughput to 100 orders per hour at the same average ticket increases theoretical capacity to $1,500 per hour.

That does not automatically mean the restaurant will generate the additional $300. The customer demand must exist to fill the added capacity.

Calculate the Revenue Opportunity From Faster Throughput

When demand is already present, even a modest improvement in orders processed per hour can have a meaningful financial impact.

Additional Revenue Per Hour = (Improved Orders Per Hour − Current Orders Per Hour) × Average Ticket

Multiply that opportunity by the number of constrained peak hours and operating days to understand how a small operational improvement could affect weekly or annual sales.

The key is determining whether your restaurant has a genuine capacity problem or simply needs more customer demand. Increasing production capacity during periods that already have unused capacity will not create additional revenue by itself.

What Causes QSR Throughput Bottlenecks?

Slow order throughput is not always caused by insufficient staffing. The bottleneck can occur anywhere between ordering and handing the completed order to the customer.

  • Slow ordering or payment at the POS
  • Too few production stations during peak demand
  • Kitchen equipment capacity limitations
  • Poor line or station layout
  • Employees waiting on ingredients or prep
  • One menu item slowing the entire production line
  • Digital orders competing with in-store orders for capacity
  • Drive-thru congestion or inefficient order sequencing
  • Insufficient staffing at a critical production position
  • Slow expediting, packaging or order handoff

More Labor Does Not Always Mean More Throughput

Adding employees can improve throughput when labor is the actual constraint. But simply putting more people into an inefficient production system may increase labor cost without producing additional orders.

Before adding labor, identify the point where orders are actually slowing down. The solution could be better station assignments, preparation, equipment placement, menu simplification or production sequencing rather than another employee.

If an additional employee allows the restaurant to process significantly more orders during periods with unmet demand, however, the extra labor expense may generate a strong return.

Measure Throughput Alongside Average Ticket

Orders per hour only measures part of the revenue equation. Average ticket determines how much revenue each completed order produces.

Increasing throughput while average ticket falls may produce less additional revenue than expected. Conversely, improving both order volume and average ticket can significantly increase peak-period sales.

Peak Revenue = Orders Per Hour × Average Ticket × Peak Hours
