Liquor cost starts with the number of usable ounces in the bottle and the standard recipe pour.

Cost Per Ounce = Bottle Cost ÷ Bottle Ounces

How to Use the Bar Pour Cost Calculator

This bar pour cost calculator helps bar, pub and restaurant operators calculate liquor cost per pour, beverage cost percentage, gross profit and potential revenue from each bottle.

Enter the bottle cost, bottle size, standard pour size and selling price. The calculator will estimate the number of theoretical pours in the bottle, cost per pour, pour cost percentage, gross profit per drink and potential bottle revenue.

For the most accurate results, use your current distributor pricing and the actual standard pour used by your bartenders. Even a small difference between the recipe and the amount actually poured can have a significant effect on beverage margins.

How to Calculate Liquor Cost Per Pour

Start by determining how many ounces of usable product are contained in the bottle. A standard 750 ml bottle contains approximately 25.4 fluid ounces.

Cost Per Ounce = Bottle Cost ÷ Bottle Ounces

Once you know the cost per ounce, multiply it by your standard pour size.

Cost Per Pour = Cost Per Ounce × Pour Size

For example, a $24 bottle containing approximately 25.4 ounces costs about $0.94 per ounce. A 1.5-ounce pour therefore has a theoretical liquor cost of approximately $1.42.

How to Calculate Bar Pour Cost Percentage

Pour cost percentage compares the direct liquor cost of a drink with its selling price.

Pour Cost % = Cost Per Pour ÷ Selling Price × 100

If a 1.5-ounce pour costs $1.42 and sells for $9.00, the theoretical pour cost is approximately 15.8%.

Pour cost percentage is useful for pricing and comparison, but operators should also consider the actual gross profit dollars generated by each drink.

Calculate Gross Profit Per Drink

Gross profit per drink is the selling price minus the direct liquor cost of the pour.

Gross Profit Per Drink = Selling Price − Cost Per Pour

Using the $9.00 drink with a $1.42 liquor cost, the theoretical gross profit is $7.58 before labor, mixers, garnishes, merchant processing and other operating expenses.

Looking at both gross profit dollars and pour cost percentage gives a stronger picture of beverage performance than relying on either number alone.

How Many Pours Should You Get From a Bottle?

Theoretical pours per bottle depend on the bottle size and standard pour used by the bar.

Pours Per Bottle = Bottle Ounces ÷ Standard Pour Size

A 750 ml bottle contains approximately 25.4 ounces. At a 1.5-ounce standard pour, the theoretical yield is about 16.9 pours before accounting for normal handling loss.

Comparing theoretical bottle yield with actual sales and inventory usage can help identify overpouring, unrecorded drinks and other beverage control problems.

Why Overpouring Is Expensive

A bartender pouring slightly more than the recipe may not appear to create a significant loss on a single drink. Across hundreds or thousands of drinks, however, the impact can become substantial.

If a 1.5-ounce recipe is routinely poured at 1.75 ounces, each drink uses approximately 16.7% more liquor than the standard recipe requires.

Overpour Cost = Extra Ounces Per Drink × Cost Per Ounce × Drinks Sold

Consistent measured pours, jiggers, controlled pour spouts and bartender training can help keep actual usage closer to theoretical usage.

Common Causes of High Bar Pour Cost

  • Bartenders consistently pouring above the standard portion
  • Free drinks that are not entered into the POS
  • Heavy pours for regular customers or friends
  • Spills and mistakes that are not recorded
  • Incorrect cocktail recipes in the POS or costing system
  • Premium liquor being substituted without an appropriate upcharge
  • Distributor price increases not being reflected in menu pricing
  • Incorrect bottle counts during inventory
  • Liquor transfers between bars or locations not being recorded

Calculate Potential Revenue Per Bottle

Once you know the theoretical number of pours in a bottle, you can estimate how much sales revenue that bottle should generate.

Potential Bottle Revenue = Theoretical Pours × Selling Price Per Pour

This creates a useful connection between inventory and sales. If bottles are disappearing faster than the corresponding POS sales suggest, the difference deserves investigation.

Theoretical Pour Cost vs. Actual Beverage Cost

The calculator shows theoretical cost based on the recipe and purchase price entered. Your actual beverage cost is determined by the amount of inventory used compared with beverage sales during the same period.

A meaningful gap between theoretical and actual cost can indicate overpouring, waste, incorrect recipes, inventory errors, unrecorded giveaways or theft.

Comparing theoretical usage with actual inventory depletion is one of the most useful beverage-control practices for bars and pubs.

Use Pour Cost to Make Better Bar Pricing Decisions

Beverage pricing should consider more than simply applying the same markup to every bottle. Operators should evaluate liquor cost, gross profit dollars, customer demand, cocktail complexity and the positioning of each product.

Premium spirits can sometimes support a higher cost percentage while still generating more gross profit dollars per sale. The goal is to understand the economics of each drink instead of managing the entire bar to one arbitrary percentage.
