If every burger was prepared exactly to recipe, there was no waste and no unrecorded product left the restaurant, actual usage should be reasonably close to that number.
What Is Actual Food Cost?
Actual food cost is based on what the restaurant's inventory and purchasing records say was actually consumed.
Suppose a restaurant begins the week with $12,000 of food inventory, purchases $8,000 and ends with $11,000.
That $9,000 represents the product that physically disappeared from inventory during the period.
