How to Use the Pizza Prime Cost Calculator

This pizza prime cost calculator helps pizzeria owners combine food cost, beverage cost and labor into one of the most important operating metrics in a restaurant: prime cost.

Enter your net food sales, beverage sales, food cost of goods sold, beverage cost of goods sold, gross wages and payroll burden. The calculator will show your total prime cost in dollars and as a percentage of sales, along with the amount of revenue remaining to cover rent, utilities, insurance, debt, repairs and profit.

Use numbers from the same accounting period whenever possible. Mixing weekly sales with monthly labor or using purchases instead of actual cost of goods sold can make the result misleading.

What Is Prime Cost in a Pizza Restaurant?

Prime cost combines the two largest controllable restaurant expenses: cost of goods sold and labor.

Prime Cost = Food COGS + Beverage COGS + Labor Cost

Prime cost percentage compares that total with net sales:

Prime Cost % = Prime Cost ÷ Net Sales × 100

This number matters because every dollar consumed by food, beverage and labor is no longer available to pay occupancy costs, utilities, insurance, administrative expenses or produce profit.

Why Pizzeria Prime Cost Can Increase

A pizzeria can experience rising prime cost even when sales appear strong. That usually means food cost, labor cost or both are increasing faster than revenue.

Common causes include:

  • Cheese and protein price increases
  • Oversized cheese or dough portions
  • Waste, remakes and unrecorded food usage
  • Discounting without adjusting labor or product cost
  • Labor schedules that do not follow sales volume
  • Overtime and payroll burden increasing faster than sales

Prime Cost Does Not Tell You Everything

Prime cost is an important management metric, but it does not replace a complete profit and loss statement. Rent, utilities, insurance, repairs, merchant processing fees, software, debt payments and other operating expenses still have to be paid from the sales remaining after prime cost.

It is also important to review the components separately. A reasonable total prime cost can hide a food-cost problem if labor happens to be unusually low, or a labor problem if food cost is temporarily favorable.
