How Draft Beer Yield Is Calculated

Theoretical yield begins with the total ounces in the keg divided by the standard serving size.

Theoretical Pours = Keg Ounces ÷ Serving Size

Cost Per Pour = Keg Cost ÷ Theoretical Pours

Draft Cost % = Cost Per Pour ÷ Selling Price × 100

Real-world yield is normally lower because some beer is lost to foam, line cleaning, spills, overfills and other service loss.

How to Use the Draft Beer Cost Calculator

This draft beer cost calculator helps bar, pub and restaurant operators calculate keg cost per ounce, cost per beer, draft beer cost percentage, potential keg revenue and the financial impact of draft beer waste.

Enter your keg cost, keg size, standard serving size and selling price. The calculator will estimate the theoretical number of beers available from the keg, cost per serving, draft cost percentage and potential revenue if the keg is sold according to your standard portion.

For the most accurate results, use current distributor pricing and the actual glass or serving size used at your bar. Draft beer profitability can change significantly when keg prices, serving sizes or waste levels change.

How to Calculate Draft Beer Cost Per Pour

Start by determining the total usable ounces in the keg. Divide the keg purchase price by the number of ounces to calculate your theoretical cost per ounce.

Cost Per Ounce = Keg Cost ÷ Total Keg Ounces

Then multiply the cost per ounce by your standard serving size.

Cost Per Beer = Cost Per Ounce × Pour Size

For example, if a half-barrel keg costs $185 and contains approximately 1,984 ounces, the theoretical beer cost is about $0.093 per ounce. A 16-ounce serving would therefore contain approximately $1.49 of beer before accounting for waste.

How Many Beers Are in a Keg?

The number of theoretical servings depends on the keg size and the amount of beer served in each glass.

Theoretical Beers Per Keg = Total Keg Ounces ÷ Serving Size

A standard half-barrel keg contains approximately 1,984 ounces. At a 16-ounce serving size, that represents approximately 124 theoretical beers before foam, spills, line loss and other waste.

Theoretical yield gives operators a useful benchmark for comparing the amount of draft beer purchased with the amount actually sold through the POS.

How to Calculate Draft Beer Cost Percentage

Draft beer cost percentage compares the theoretical product cost of each beer with its selling price.

Draft Beer Cost % = Cost Per Beer ÷ Selling Price × 100

If a 16-ounce beer costs $1.49 and sells for $7.00, its theoretical draft beer cost is approximately 21.3%.

Cost percentage is useful for evaluating pricing, but gross profit dollars should also be considered. A higher-priced craft beer may carry a higher cost percentage while still producing more gross profit dollars per sale.

Calculate Potential Revenue From a Keg

Once you know the theoretical number of servings available, you can estimate the sales revenue the keg should produce.

Potential Keg Revenue = Theoretical Servings × Selling Price

A half-barrel keg producing 124 theoretical 16-ounce beers at $7 each represents approximately $868 in potential sales before accounting for normal draft-system waste.

Comparing potential keg revenue with actual POS sales can help identify unusually high waste, incorrect serving sizes or other draft-control problems.

Draft Beer Waste Can Be Expensive

Draft systems naturally experience some loss, but excessive foam, spills, improper pours and poorly maintained equipment can cause actual yield to fall significantly below theoretical yield.

Lost Revenue From Waste = Potential Keg Revenue × Waste Percentage

If a keg has $868 in potential sales and 5% of that potential is lost, approximately $43.40 of sales opportunity disappears from that single keg.

Multiply that difference across dozens or hundreds of kegs and draft beer waste can become a meaningful annual profitability issue.

Common Causes of High Draft Beer Waste

  • Excessive foam during pours
  • Incorrect keg temperature
  • Improper CO2 pressure or draft-system balance
  • Dirty or poorly maintained beer lines
  • Employees overflowing glasses during service
  • Incorrect glass sizes or inconsistent serving portions
  • Free beers that are not entered into the POS
  • Spills that are not recorded
  • Sampling without tracking product usage
  • Keg changes and line clearing creating excessive product loss

Why Glass Size Matters

A small change in serving size can have a large impact on keg yield. If your pricing assumes a 16-ounce serving but bartenders regularly use larger glasses or overfill them, the number of sellable beers per keg decreases.

Consistent glassware and clear fill standards make theoretical keg yield much more useful as a management benchmark.

Theoretical Draft Cost vs. Actual Draft Cost

This calculator estimates theoretical draft cost based on your keg price, serving size and selling price. Actual draft cost is determined by how much product was used compared with the corresponding draft beer sales.

If theoretical cost is 21% but actual draft beer cost is consistently much higher, investigate the difference rather than simply accepting the higher percentage.

The gap may be caused by waste, foam, incorrect portions, unrecorded giveaways, inventory errors or other beverage-control issues.

Use Draft Beer Cost to Make Better Pricing Decisions

Keg prices can change frequently, especially across craft, seasonal and rotating beer programs. Recalculate cost whenever a new keg is added or distributor pricing changes.

Operators should consider both draft cost percentage and gross profit dollars when setting prices. The lowest cost percentage does not automatically make a beer the most profitable item on the tap list.
