Why Yield Changes Food Cost

Restaurant protein cost should be based on the usable cooked product, not simply the raw purchased weight.

Usable Ounces = 16 × Yield %

Cooked Cost Per Ounce = Raw Cost Per Pound ÷ Usable Ounces

If beef costs $6 per raw pound and yields 75%, the restaurant only gets 12 usable cooked ounces from that pound.

The true cooked cost becomes $0.50 per ounce, not $0.375.

How to Use the Restaurant Protein Yield Calculator

This restaurant protein yield calculator helps restaurant and taqueria operators determine the true usable cost of meat after trimming, cooking and moisture loss.

Enter the raw purchase weight, raw cost per pound and cooked usable weight. The calculator will show cooked yield percentage, true cooked cost per pound, cost per ounce and portion cost.

This is especially useful for proteins such as carne asada, carnitas, birria, chicken, pork and other meats that lose weight during preparation. The purchase price alone does not tell you the real cost of the product that actually reaches the customer's plate.

How to Calculate Protein Yield

Protein yield measures how much usable cooked product remains after the meat has been trimmed and cooked.

Protein Yield % = Cooked Usable Weight ÷ Raw Weight × 100

For example, if you purchase 20 pounds of raw carne asada and end with 14.5 pounds of usable cooked meat, the yield is 72.5%.

That means 27.5% of the original raw weight was lost through trimming, moisture loss, fat rendering or other preparation loss.

Why Raw Cost Per Pound Can Be Misleading

A protein that costs $5.25 per raw pound does not really cost $5.25 per usable cooked pound if part of the product disappears during preparation.

True Cooked Cost Per Pound = Raw Cost Per Pound ÷ Yield %

If a product costs $5.25 per raw pound and yields 72.5%, the true cooked cost is approximately $7.24 per usable pound.

This is the number that should be used when calculating taco, burrito, bowl and entrée recipe costs.

How to Calculate Protein Cost Per Ounce

Once you know the true cooked cost per pound, divide it by 16 to determine the usable cost per ounce.

Cooked Cost Per Ounce = Cooked Cost Per Pound ÷ 16

A cooked protein cost of $7.24 per pound equals approximately $0.45 per usable ounce.

That makes it much easier to calculate the real cost of a standard 2-ounce, 3-ounce, 4-ounce or larger portion.

Calculate the True Cost of a Protein Portion

Portion cost is calculated by multiplying the cooked cost per ounce by the standard portion size.

Portion Cost = Cooked Cost Per Ounce × Portion Ounces

If the usable cooked cost is $0.45 per ounce, a 3-ounce protein portion costs approximately $1.35 before tortillas, cheese, toppings, salsa, packaging or other ingredients are added.

Why Protein Yield Matters in Mexican Restaurants

Protein is often one of the largest direct costs in Mexican restaurants and taquerias. Small differences in yield can materially change the true cost of tacos, burritos, bowls and combination plates.

Carne asada, carnitas, birria, barbacoa and chicken can all produce different cooked yields depending on the cut, trimming, cooking method and preparation process.

Using one assumed yield for every protein can create inaccurate recipe costs and weak menu-pricing decisions.

Weigh the raw product before preparation, then weigh the usable cooked product after trimming and cooking. Repeat the test several times to build a reliable average.

Yield can change based on vendor, cut, employee technique and cooking process, so periodically retesting high-cost proteins can improve recipe accuracy.

Compare Protein Suppliers Using Usable Cost

The lowest raw purchase price does not always represent the lowest true food cost.

A more expensive protein with a stronger cooked yield may actually cost less per usable ounce than a cheaper product with excessive trim or cooking loss.

Comparing vendors based on usable cost rather than invoice price alone can produce better purchasing decisions.

Why Portion Control Matters After Yield Is Calculated

Accurate yield costing only works if employees also follow the standard portion size.

If the recipe uses a 3-ounce cooked protein portion but employees consistently serve 3.5 ounces, actual protein usage will still exceed theoretical cost.

Scales, portion scoops, pre-portioned product and clear recipe standards can help keep actual usage closer to the costing model.

Turn Small Portion Differences Into Annual Dollars

A small protein overportion can become a large annual expense in a high-volume restaurant.

Annual Overportion Cost = Extra Protein Cost Per Item × Items Sold Per Year

If an extra half-ounce costs only $0.23 and your restaurant sells 500 protein-based items per day, the additional product usage can exceed $100 per day.
